Jean's Irish Vegetable Soup

Ingredients
I medium Spanish Onion3 cloves Garlic7 large carrots, chopped5 roasted red peppers2 medium potatoes, chopped3 stalks celery1 litre veg or chicken stock1 tbsp olive oilSalt & Pepper to season
Directions
Broil red peppers until skin is black
meanwhile, saute garlic, onion and celery in olive oil
add stock
then add all other veggies.
remove skin from peppers and add
cook for an hour or until veggies are tender
puree when ready
you can add cream to this soup for more creaminess
