Loaded Mexican Potato

Ingredients
1 medium potato, baked or microwaved until soft4 oz. ground turkey breast1 tbsp cumin, garlic powder and chili powder 2 tbsp salsa2 oz. shredded low-fat cheddar or colby cheese1-2 tbsp reduced fat sour cream
Directions
Microwave 1 med. potato for 4 -6 minutes or until cooked through. Brown ground turkey in skillet Add spices and salsa, mix together. Cut Potato open, Top with turkey mixture, cheese and sour cream. (optional: 1/2 tbsp cilantro or black olives for garnish)
