Mushroom, Spinich, Leek and Cheese Frittata

Ingredients
Cook mushrooms and leeks first. In large skillet melt oil, add spinach saute slightly. Add cooked mushrooms (I used a whole pound). Add cheese and pour in the beaten eggs. Bake at 350 for 15 to 18 minutes. Cut in four wedges and serve. This travels easily for meals on the run.
