Chinese Pork

Ingredients
1 T safflower oil (or other light oil)1/4 C teriyaki sauce or soya sauce1/4 C flour9 oz pork tenderloin or boneless chops1 yellow onion, slivered1/2 red bell ppepper, julienned1 cn mushroom stems & pieces1 tbsp pickled ginger, cut in slices1/2 t black pepper
Directions
In wok or skillet, heat oil.
Cut pork into thin strips. Dip in teriyaki sauce then in flour.
Fry in oil.
Add onions an cook until softened.
Add any remaining teriyaki sauce and enough liquid from mushrooms to allow you to scrape the browned bits from meat off the bottom of the pan.
Add the remaining mushrooms an liquid.
Stir in peppers.
Slice ginger in thin strips. Stir in with pepper.
Cover and let simmer until everything is tender and juices have thickened to make a sauce. Add aditional water if required.
Serve over rice.
