Baked Apple Oatmeal

Ingredients
Apple Mix2 TBS butter4 cups peeled and chopped apples2 TBS sugar1 tsp molasses1 tsp. cinnamon1/4 cup apple cider (or apple cider vinegar)Oatmeal Mix2 Tb. butter1 cup whole milk1 cup unsweetened applesauce2 eggs 3/4 cup sugar1 TBS. molasses1 TBS cinnamon1/2 tsp. nutmeg1 tsp salt2 tsp. vanilla3 cups old fashioned oatsStreusel Mix4 TBS butter, cold, cut into small pieces1/4 cup gluten free flour (starch based)1/2 cup old fashion oats1/4 cup sugar1 tsp. molasses1/2 tsp. salt1/2 tsp. baking powder
Directions
1) Preheat oven to 375 degrees. Grease a 9 X 13 casserole.

2) In a skillet over medium heat, cook Apple Mix until apples are soft and liquid is reduced, about 10 minutes.

3) In a bowl, combine Oatmeal Mix ingredients. Stir Apple Mix into Oatmeal Mix.

4) In a small bowl, mix Streusel ingredients with a fork into pea sized crumbs.

5) Pour Apple/Oatmeal mix into casserole. Top with Streusel. Bake at 375 F degrees for about 30-35 minutes

Serving Size: makes a 9X13 casserole, 12 servings
