2 1/2 c. flour1 1/4 c. Splenda3 tsp. cinnamon2 tsp. baking soda1 tsp. salt3 large eggs3/4 c. applesauce, unsweetened1/2 c. canola oil1 tsp. vanilla2 c. carrot, grated1 med. tart apple8 oz. crushed pineapple1/2 c. shredded coconut1/2 c. raisins12 c. chopped walnuts
In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts.
2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
