Crock Pot Chicken Caccitore

Ingredients
1 lb. boneless chicken32 oz. (2 cans) crushed tomatoes1 large onionbasiloreganoparsley flakesbay leafwhite or cooking wine
Directions
Thoroughly wash chicken and place in crock pot. Add tomatoes. Peel and slice onion and add. Season with basil, oregano, parsley flakes to taste (approximately 2-3 tbsp.). Add two bay leaves. Cook on high for four hours. Add 1/2 cup wine and cook uncovered for an additional hour. Best served over rice or with pasta. Makes approximately 8 generous servings.
