James' Manly Smoked Red Beans and Sausage

1 pound dried red beans, soakedovernight ( Or you could use a couple cans of beans instead, like 3)10 cups water1 pound smoked sausage, sliced intorounds1 large onion, chopped1 green bell pepper, chopped1 jalapeno pepper, seeded and chopped(optional, if your a coward)8 cloves garlic, chopped1 teaspoon ground black pepper1 teaspoon Creole seasoning, or to taste6 fresh basil leaves, chopped ( Or you can use about a half TBSP dried)1 ham hock or 4 or so Bacon slices ( or ends, I like to use pepper smoked ends from the local meat store)
If you are cooking from dry beans, make sure to soak overnight, or quick soak per directions. Or just used canned cause your lazy, just like me. Chop up all the veggies indicated int he ingredient list as well as anything else requiring a good chopping. Once your have solved your dry vs canned bean debacle Huck all the ingredients into the slow cooker, and I mean Huck, with Gusto! Lets the ingredients know your a badass. And lets all admit it people, stuff taste better when your a badass. Cook on high 2 hours, then downgrade to low quicker than a company downgrades its workforce during "Tough Times".
Cook some rice to slather on, or don't, its still a badass dish without the carb load down. MMMHHH Badass beans and smoked sausage.
