Chicken Cashew Korma

*Best Choice Boneless Skinless Chicken Breast (frozen), 24 oz (remove)Onions, raw, 2 cup, chopped (remove)*Cashew Nuts, Raw, 1.5 cup (remove)*coconut milk canned 1/2 can, 4 serving (remove)*Peppers, sweet, red, fresh, 2 cup, chopped (remove)*Peanut Oil, 4 tbsp (remove)6T Korma seasoningsalt and pepper to taste
Saute onions, peppers and cashews in half the oil until onions are translucent.
Add remaining oil and the chicken and continue to cook until the chicken is no longer pink. Add coconut milk, and spices, stir... let simmer 3-4 hours until chicken is fall-apart tender. Adjust salt and pepper as needed. Serve with Rice (Jasmine rice is great) and top with toasted coconut chips (optional).
