Chocolate Bacon Sweet Potato Muffins

Ingredients
2 cups almond or hazelnut flour3 Tbs Special Dark Cocoa Powder1 tsp cinnamon1/2 tsp baking powder1/2 tsp baking sodapinch of salt3 slices center cut bacon3 large eggs1/4 cup honey1/4 cup extra virgin olive oil3 Tbs So Delicious Coconut Milk1 tsp vanilla extract1 med sweet potato, baked, skin removed
Directions
Preheat oven to 350. Fry the bacon and set aside to drain and then crumble. Mix dry ingredients together, reserving bacon. Combine wet ingredients in the bowl including the mashed sweet potato. Add wet ingredients to the dry and mix thoroughly. Add in most of the bacon, reserving some to sprinkle on top before baking. Add mix to 12 reg size muffin tin sprayed with cooking spray. Sprinkle reserved bacon on top. Bake for 25 min. Allow to cool slightly before removing.
