1 stick unsalted butter, room temperature1/2 cup granulated sugar1 egg3 small/medium bananas, mashed with a fork1 teaspoon baking soda dissolved with 1 Tablespoon of Hot Water1 1/2 cups all-purpose flour1/4 teaspoon salt1/2 teaspoon nutmeg1/2 cup mini chocolate chips or walnuts (optional, not calculated in calories for this recipe)
preheat the oven to 350 degrees. Grease mini muffin pan. In a small bowl mix flour, nutmeg, salt and then set aside. Cream the butter and sugar with an electric mixer (butter should be at room temp). Add egg and bananas and mix well. Then dissolve the baking soda in 1 tbsp of hot water and then mix it in. With the mixer on low, slowly add in the flour and mix until it is not longer visible. Scoop mix into muffin pans and bake on 350 for 15-20 minutes until a light golden brown.
