Gluten free eggplant parmigana

Ingredients
2 eggplantsmarinara saucemozzarella cheeseparmesan cheeseegg whitecooking spray
Directions
Preheat oven to 375 F. Slice off tops of eggplants, then slice eggplant lengthwise into slices approx. 1/4" thick. Dip in egg white and dredge in Parmesan cheese. Place on a baking sheet sprayed with cooking spray. Bake for 10-15 min per side until eggplant is soft in middle. Top with your favorite marinara sauce (I used Victoria) and desired amount of mozzarella (I used some fresh mozzarella, yummy!) and put back in oven until cheese is melted and bubbly.

Serving Size: Makes at least 4 servings, depending on eggplants.
