Low Fat Jambalaya

Ingredients
Four roma tomatoes (sliced)1 can petite diced tomatoes (14.5 oz)1 small yellow onion4 ribs celery3 tsp minced garlic1 c. brown rice (dry, makes 3 c. cooked)16 oz. chicken broth16 oz. Healthy Choice Low Fat Smoked Sausage1 tsp Cayenne Pepper1 tsp Black Pepper1/2 tsp Basil (dried)1/2 tsp Thyme (dried)
Directions
Spray saute pan (or nonstick sauce pan) with Pam Cooking Spray. Saute onion, garlic and celery for 3-4 min. Add sliced sausage, saute for 1-2 min more. Add chicken broth, tomatoes, spices and rice. Simmer over medium-low heat stirring occasionally until rice is tender (about 45 min). Shrimp or chicken can be substituted in place of sausage.

Makes 6 servings

Warning: This dish is SUPER spicy-- if you like things to be more mild, cut the cayenne pepper and black pepper to 1/2 tsp each.
