Easy PB Cookies

Ingredients
1 cup peanut butter1/2 cup white sugar1 egg
Directions
Preheat oven to 325 degrees.

Mix all ingredients with a hand mixer.

Form dough into 1" balls, place on pan. Flatten with a fork.

Bake for 15 minutes. Let cool on pan for 5 minutes, then remove.

Makes ~ 20 cookies.

Delicious the next day!

    super and only 3 ingredients - my kind of recipe.
    I ran out of pb and subbed 1/4 cup with almond butter, tossed in 2 tbsp of mini choc chips and used 1/2 cup brown sugar unpacked instead - same nutritionals.
    Now THIS is my idea of a 100 calorie snack! Mmm - 3/27/09
