MAKEOVER: General Tso Tofu

Ingredients
1 block extra firm tofu1/2 cup homemade or low sodium veggie broth4 cloves garlic1 tbsp sugar1 tbsp soy sauce1 tbsp rice vinegar1/8 tsp ginger1/2 tsp red pepper flakes1 cup frozen peas
Directions
Whisk veggie broth, sugar, soy sauce, corn starch, rice vinegar and ginger. Set aside. In a large skillet heat oil and saute garlic & red pepper flakes for 2-3 min. Add tofu and cook until browned. Add liquid and peas and cook until sauce thickens and peas are cooked through.

Makes 4 servings.
