Whole Wheat (Almost) Dairy Free Pancakes

1 1/2 cups whole wheat pastry flour3 1/2 teaspoons baking powder1 tablespoon sugar1 1/4 cups soy milk (regular or vanilla both work well)3 tablespoons butter, melted1 large egg
Combine dry ingredients in the bowl of a food processor. pulse a few times to mix ingredients well.
In a separate bowl, combine the milk, egg and melted butter. With the food processor on, add wet ingredients to dry.
Turn off food processor immediately once ingredients are mixed, you don't want to over-process the batter or you will have flat pancakes.
On a heated griddle, ladle out pancakes. Once you begin to see bubbles on top, and the sides firming up, flip pancake. Serve hot with your choice of toppings. (Toppings not calculated.)
