New England Clam Chowder

Ingredients
1 T butter1 stalk celery chopped1/4 c chopped onion2 T floursalt and pepper6oz waterclam juice from can1 med. potato cubed1 can clams4oz skim milk
Directions
Saute celery and onion in butter until soft. Add flour and salt and pepper, cook stirring one minute. Add water and clam juice, stir well. Add chopped potato, Reduce heat and simmer for 10 min. until potato is tender. Add skim milk and clams. Cook an additional 3-5 min and enjoy.
