1 tsp olive oil.5C yellow peas1 Can Garbanzo Beans1/2 C (TJ's chopped thick) coconut cream1 Can fire roasted tomatoes1 small onion, chopped1/2 eggplant, cubed1C water (more as needed)2 C fresh spinachfresh ginger 1 Tbsfresh garlic, 1-2 clovesspices to taste:currygaram masalacorriandertumericcuminfresh cilantro
saute onion and eggplant in oil, add spices, add tomatoes
add coconut cream, add washed yellow peas, add garbanzo beans.
When starting to boil dump in crock pot cover and cook on high for 3 hours, stir add more water as needed, cover and cook another two.
Add spinach a few minutes before serving until it wilts in and blends.
