Michelle's Healthy Hearty Chicken Stew

Ingredients
2.5 lb Roasting Chicken1 cup peas1 cup carrots 1/2 cup zucchini1/2 cup yellow squash1/2 cup yams 1/2 cup green beans 1/2 cup celery1/2 cup corn 1 clove garlic finely chopped1 tablespoon Kelp powder1 tablespoon Rosemary or 2 inch fresh sprig1 teaspoon thyme or 1 inch fresh sprigDash sea salt8 ounces whole Barley6 ounces rolled oats11 cups water
Directions
Rinse Chicken and place in large stock pot, add peas and corn, coarsely chop carrots, zucchini, yellow squash, yams, green beans and celery, add to chicken, peas and corn. Add garlic, kelp powder, rosemary, thyme, salt, Barley, oats and water. Bring to a rolling boil, lower heat to as low as possible and simmer 2 hours, stirring occasionally. Remove chicken, cool slightly, remove skin and debone. Shred chicken and add back to vegetable mixture, stir and enjoy! Makes approximately 15 1-cup servings.
