Hemp Protein Granola Bars

Ingredients
2 Tbs. chia seeds6 Tbs. water1 1/2 c. rolled oats3/4 - 1 c. pecans, chopped1 c. dates, chopped 1 c. coconut flakes1/2 c. hemp protein powder (I used Manitoba Harvest - vanilla)1/4 c. sesame seeds2 Tbs. poppy seeds2 tsp. cinnamon1/2 tsp. salt 3 ripe bananas, mashed1/4 cup coconut oil2 tsp. vanilla extract3 Tbs. maple syrup
Directions
1. Preheat oven to 350F.

2. In small bowl, mix the chia seeds and water together. Set aside while working on other ingredients.

3. In a large bowl combine oats, pecans, dates, coconut flakes, protein powder, sesame seeds, poppy seeds, cinnamon and salt.

4. In a another bowl, mix mashed bananas, coconut oil, vanilla and syrup (can probably use a food processor).

5. Add chia gel to banana mixture.

6. Pour wet ingredients over dry ingredients and stir until well combined.

7. Spread the batter into a baking pan (I used a 9x13) and smooth out the top with the a spatula. Bake for 25 minutes, or until edges are golden brown. Let cool completely and store in airtight container.
