Gluten Free Oatmeal Cookie

¼ cup butter1 ¼ tsp baking soda¾ cup sugar¾ cup palm sugar (or brown sugar)3 cups rolled oats GF6 oz chocolate chips2 eggs¾ cup combined walnuts & sunflower seeds1 tsp vanilla1 cup peanut butter

Preheat oven to 350 F
In Large bowl combine sugars and butter. Beat until creamy. Add eggs vanilla and baking soda, mixing well. Add peanut butter and mix. Stir in oats, chocolate chips and nuts. Place teaspoon full of dough on lightly greased baking sheet (or parchment paper) about 2 inches apart. Bake 10 - 12 minutes until lightly brown around edges.
Serving Size: 36 - 48 cookies depending on serving size
