Ingredients
Carrots, raw, .5 cup, grated Raisins, .25 cup (not packed) *Coconut (Shredded) 2 Tbsp, 1 serving *Whole Wheat Flour, 1 cup *Wheat flour, white, all-purpose, unenriched, 1 cupBanana, fresh, 3.5 small (6" to 6-7/8" long) Egg, fresh, whole, raw, 2 large Applesauce, unsweetened, .125 cup Water, tap, .5 cup Cinnamon, ground, 1 tsp *Pumpkin Pie spice, 1 tsp Baking Soda, 1 tsp Baking Powder, 1 tsp*Canola Oil, 2 tbsp
Directions
shred carrots,
mash 3 bananas or puree them
mix banana with egg,
add in all ingredients except flour

add flour
mix
layer half of the batter into a bread pan, slice 1/2 of the 1/2 banana thinly, layer it, add rest of batter and add more thin slices to the top. cook 40 min at 350
