PrairieHarpy's Chicken Andouille Sausage With Mustard Sauce

4 spritzes olive oil cooking spray (I use Mazola.)5 dashes Creole seasoning or to taste (I use Emeril Bayou Blast)1/4 cup red bell pepper, thin strips1/4 cup green bell pepper, thin strips1/4 cup white onion, thin strips1 cup low sodium chicken broth3 tbsp honey mustard (I use Texas Pete.)2 tsp white wine vinegar1 tsp thyme, ground4 smoked andouille chicken sausages, precooked and sliced (9 oz - I used a pack of Hans' All Natural.)
Heat 4 spritzes of cooking spray in a large skillet over medium heat.
Sautee peppers and onions until just shy of tender.
Add creole seasoning and sausage. Heat for 1 more minute.
Add chicken broth, honey mustard, white wine vinegar, and thyme. Simmer until sauce thickens.
Serve over rice. (Rice not included in nutritional calculations. I used Uncle Ben's Whole Grain Brown. Looks like dirty rice, anyway!)
This recipe makes about two 1 cup servings or four 1/2 cup ladylike servings.
