Creamy Pesto Chicken Salad

Ingredients
3 oz baked boneless, skinless chicken thigh2 Tbsp 2% Greek yogurt1 Tbsp Pesto1/2 oz fresh mozzarella1 Tbsp sun dried tomatoes
Directions
Bake or poach the chicken. Cut into 1/2 inch cubes.

Dice the mozzarella into 1/4 inch cubes, and chop the sun dried tomato finely.

Mix together the yogurt and pesto. Toss the chicken, mozzarella, and tomatoes with the yogurt sauce until coated.

Serving Size: enough for 1 sandwich
