Ingredients
1 1/3 cup flour3 tsp baking soda1/2 tsp salt4 packets splenda1 cup light soymilk2 tbs unsweetened applesauce1/4 cup egg beaters1 tsp vanilla extract1/2 to 1 cup diced fruit (optional)PAM cooking spray
Directions
Mix dry ingredients in large bowl (flour, baking powder, salt, and splenda). Add egg beaters, milk, applesauce, and vanilla extract. Stir in diced fruit and mix well. Spoon 2 tbs mixture onto PAM sprayed skillet over medium high heat. Cook for 2-3 minutes on each side, or until slightly browned on bottom and bubbling on top.

    Too much baking soda in the recipe. It tasted so bad, even my kids couldn't eat them and they really wanted them! Could be good with less baking soda. - 4/24/08

    I made this and added frozen blueberries. My batter was very thick but it may have been because I added some flax. I don't know but they were good. - 4/19/08
