Jim's Sunday Morning Pancakes

Ingredients
1 1/2 cups organic multi grain pancake mix2 small apples, peeled & chopped very fine (Or process in food processor until almost applesauce)1 small banana, mashedWater to bring to desired consistency
Directions
Mash banana in large bowl. Peel and chop apples then stir into banana. Mix in pancake mix, adding water in small amounts to get right consistency.
Drop by large spoonful into preheated non stick frying pan or griddle. When tops are bubbly and beginning to look dry, flip pancakes over.
Cook until golden brown on second side.

Makes 20 3" pancakes

We buy bulk pancake mix at Earth Fare. Jim is pleased he can continue his Sunday morning cooking for me now that I'm on Spark.
For variety, use blueberries or peaches instead of apples. Yum!
