Lentil Soup with Ham

Ingredients
Heat olive oil in large pot. Add onions, carrot, celery stirring to coat with oil. Add garlic, salt and pepper to taste and chopped ham. I use thin sliced lean Italian deli ham (prosciutto cotto). Add tomatoes, Cook about 8 minutes until veggies are tender. Stir in herbs, lentils and broth. Bring to a boil and then reduce heat to simmer. Simmer for 30 -40 minutes. Testing lentils for doness at 30 minutes. Some lentils cook more quickly than others. Remove thyme stems and serve.
