Mint Layered Brownies

1/2 cup butter2 ounces unsweetened chocolate1 cup granulated sugar1 teaspoon vanilla extract2 eggs3/4 cup all-purpose flour1/2 teaspoon baking soda1/4 teaspoon salt1 dozen Ande's Candy's chocolate-covered mints
Preheat oven to 350 F
In a medium saucepan, melt butter and chocolate over low heat.
Remove from heat, transfer to a large bowl.
Add sugar and vanilla, beat until well blended.
Add eggs one at a time, beating well after each addition.
In a medium bowl, sift together flour, baking soda, and salt.
Add dry ingredients to chocolate, mix until well blended.
Pour half the batter into a greased 8-inch square baking pan. Place candies evenly on batter, top with remaining batter.
Bake 30-35 minutes or until set in center. Cool completely in the pan before cutting into portions.
Serving Size: Makes twelve 1.5x 2 inch brownies
