My take on ELAINEHN's Protein Pancakes

Ingredients
2 packets Quacker Weight Control Instant Oeatmeal - I used Maple & brown Sugar2 whole extra large eggs2/3 cup fat free cottage cheese
Directions
Mix all ingedients into a blender or food processor to combine.

Heat nonstick pan or griddle to medium, spray with a little cooking spray.

Use 2oz laddle to spoon batter into pan and spread out a little.

Turn once bottom is golden brown, these are done when he center no longer feels squishy to the touch.

Makes 6 pancakes.
