Ingredients
1 1/4 lbs. ground turkey2 Tbsp. olive oil1 onion2 cloves garlic1 bell pepper8 oz. mushrooms14 oz. diced tomatoes36 oz. reduced sodium vegetable or tomato juice1 Tbsp. fresh lemon juice14 oz can black beans1 Tbsp. cumin1/8 tsp. cayenne1/4 cup fresh parsley1/4 cup fresh cilantro
Directions
brown meat; saute onion, garlic, mushrooms, and peppers; stir in remaining ingredients except cilantro and parsley; simmer for 20 minutes; add cilantro and parsley and simmer 10 more minutes. Store in frig for 5 days or freeze.
