21 pieces boneless, skinless chicken tenders (about 2 oz. pieces)2 large eggs2 tbsp. hot sauce1 cup unsweetened coconut flakes0.5 cup almond meal2 tsp. chilli pepper
1. Combine hot sauce and egg, and lightly whisk.
2. Combine almond meal, coconut flakes and pepper.
3. Dip chicken in egg wash, then cover in coconut mixture.
4. Place on wire rack on baking tray and bake at 350 for 25 minutes or until golden.
Serving Size: Makes 7 3-piece servings (about 7 oz. per serving, depending on chicken size)
