Spinach And Artichoke Dip

Ingredients
4 Tbs Reduced Fat Sour Cream1/2 Cup Lowfat Cottage Cheese1 Clove Garlic1/4 Cup red onion, diced1 Cup kale15 oz. can artichoke hearts1/2 C shredded swiss cheesesalt and pepper to taste
Directions
First start chopping the garlic and red onion. In a medium skillet, heat a splash of extra virgin olive oil and cook garlic and red onion for 2 min. Then place frozen spinach in skillet and cook until thawed. While that cooks, chop up artichoke hearts. Then in separate microwave safe bowel, place sour cream, cottage cheese and artichoke hearts and mix together. Add 1/4 of the mozzarella cheese and mix. Season with salt and pepper to taste. Add cooked spinach and onions. Place rest of mozzarella cheese on top and microwave for about 2 minutes or until the cheese is melted. Enjoy! -
