Avocado Bruschetta

8 ounces whole-wheat baguette, sliced into 8 (1-inch) pieces2 avocados, pit removed juice of 1 lime 1 large ripe tomato, diced, excess juice discarded2 extra thin slices sweet onion, cut into quarters (see photo) salt and pepper
Preheat the oven to 350 F.
Spread the baguette slices on a baking sheet. Bake 8-10 minutes, turning halfway through, until the bread is toasted.
Meanwhile, mash the avocados with the juice of one lime (about two tablespoons) and a pinch each of salt and pepper.
Spread the avocado mixture on top of the baguette slices (1 heaping tablespoon per slice). Top with a couple of pieces of onion and a few chunks of tomato. Sprinkle with a pinch of salt and pepper.
Serve immediately.

So tasty and easy to prepare. I used a two ounce slice of Tuscany bread and counted it as two servings. Easy to adapt recipe for one person. Used half a lemon and a small avocado. Mashed with pastry blender. Saved half of the mixture and diced tomato and onion for next day for another tasty treat!
