Nutmeg Chiffon Cake

1 1/4 cups cake flour1 cup whole wheat pastry flour3 tbsp baking powder1 tsp nutmeg1 tsp salt1 1/2 cups packed dark brown sugar1/4 cup canola oil1/4 cup applesauce5 eggs, separated, + 2 egg whites (room temperature)3/4 cup cold water1/2 tsp cream of tartar
Preheat oven to 325F. Grease and flour a 10" tube pan.
Whisk together the first four ingredients in a large bowl.
Combine brown sugar, oil, applesauce, egg yolks and water, beat until smooth.
Add to dry ingredients, stir until smooth.
Beat all seven egg whites in a spotlessly clean bowl with the cream of tartar until stiff.
Gently fold the egg whites into the batter.
Bake for 55 minutes.
Invert tube pan to cool completely before attempting to remove this tender cake.
