Fruit Butter Spice Cake

Ingredients
¼ cup canola oil¼ cup melted butter¼ cup xylitol6 packets Truvia¼ cup sugar1 egg1 cup buttermilk1 cup unsweetened apple (or any-fruit) butter - see Tips for my Honeyed Carrot Cake Butter link1 ¼ cups whole wheat flour1 tsp baking soda½ tsp salt1 tsp cinnamon½ tsp cardamom¼ tsp cloves¼ tsp black pepper¼ tsp white pepperZest of 2 oranges2 sheets graham crackers, coarsely crushed, for crumble topping
Directions
Preheat oven to 350 degrees F. Lightly grease a 9” square pan and line the bottom with parchment.
In a bowl, beat together the oil, melted butter, xylitol, Truvia and sugar until blended.
Add the egg, buttermilk and fruit butter, mixing well.
Add the flour, baking soda, salt, cinnamon, cardamom, cloves, black and white pepper and the orange zest.
Mix until no streaks of flour remain.
Pour the batter into the prepared pan and top with graham cracker pieces.
Bake 40 minutes, until tests done. Cool completely in the pan.
