Chicken Parm in muffin cups

Ingredients
1 lb ground chicken1/4 cup parm/romano cheese2 medium eggs1tsp black pepper1 tsp kosher salt2 tsp Italian seasoning1/2 cup marinara sauce2 slices provolone cheese2 slices of toasted whole wheat toast, processed into bread crumbs
Directions
Mix all ingredients except the marinara sauce and provolone in bowl. Divide mixture into 5 large muffin cups that have been sprayed with Pam. Bake at 350 for 30 mins. Remove from oven and cover each muffin with 1 -2 tablespoons of marinara sauce and shredded provolone. Bake another 5 minutes. Remove and serve with spaghetti and/or salad.
