Potato Bacon Soup

2 T butter½ pound bacon (Applegate turkey or regular bacon)1 large onion, sliced8 cups vegetable stock2 cups water6 large potatoes, peeled and cut upsea salt to tastepepper to taste
Melt butter in a large stock pot. Add bacon and onion and cook till onion is soft and golden. Add vegetable stock, water, potatoes, and salt and pepper. Bring to boil. Reduce heat, cover, and simmer one hour. Remove from heat and let cool. Once cool, process in batches in a blender or food processor until smooth. Return to pot and heat through.
(Garnish with pats of butter and snipped parsley.)
