Pumpkin Coconut Soup

Ingredients
2 15 ounce cans of pumpkin (or about 4 cups of fresh pumpkin)1 13.5 ounce can light coconut milk4 cups chicken (or veggie) broth2 cloves garlic2 tsp ginger1 tsp chili powdersalt/pepper to taste
Directions
mince garlic, add all ingredients to pot, simmer for about 20 minutes, use immersion blender or blend in regular blender in batches (this is only if necessary- it's usually "soupy" enough without the need to blend)
