Banana Nut Bread

Ingredients
1/2 C unsalted butter1/2 C unsweetened applesauce2 C Splenda4 egg whites1 tsp baking soda1 tsp baking powder4 1/2 C whole wheat flour4 large ripe bananas, mashed1 C chopped walnuts, optional
Directions
Cream the butter with the applesauce. Add splenda and eggs, mix well. Add dry ingredients and mix well. Stir in bananas and walnuts. Spray two loaf pans with non-stick spray. Pour 1/2 of batter into each pan. Bake at 350 for 60 minutes, or until golden brown and top is set (I usually start checking after about 45 minutes). Remove from oven, let cool 10 minutes and then remove from pans. Enjoy! Each loaf makes about 12 slices.
