Tuna Couscous Salad

Ingredients
84 g. dry couscous2 oz. Trader Joe's Low Sodium Garden Patch Juice blend3 oz. water1 tsp. olive oilDash garlic powder>140 g. celery, diced100 g. each: tomatoes, broccoli stems, carrots and radishes, diced80 g. scallions, diced84 g. red bell pepper, diced58 g. fresh spinach, cut chiffonade>1 can solid white tuna in water, drained but not squeezed dry2 tsp olive oilCurry powder, garlic powder, and black pepper to taste
Directions
bring Garden Patch juice and water to boil in small covered saucepan with garlic and olive oil. Stir in couscous, cover, and take off heat. Let stand.

Prep all vegetables.

Drain tuna, but do not squeeze dry.

Take lid off saucepan, and fluff couscous. Allow to cool to room temperature. Fold couscous into vegetables. Add tuna, olive oil and seasonings to taste and mix gently.
