Simple Lower-Carb Chocolate Chip Cookies

Ingredients
1 cup almond flour1/4 tsp baking soda1/8 tsp salt2 packets PureVia2 T vegetable shortening1 T honey3 T semi-sweet chocolate chips2 tsp vanilla extract
Directions
Pre-heat oven to 325 degrees. Line a baking sheet with parchment paper.

Combine almond flour, baking soda, salt, and PureVia in a food processor. Whizz to combine. Add shortening, honey, and vanilla extract. Process about 30 seconds to a minute, until dough comes together. Mix in chocolate chips.

Add by spoonfuls to baking sheet. Shape into rough circles (these cookies will not spread much). Bake for 8 to 10 minutes, until the edges of the cookies turn golden brown.
