2 egg whites3 tbsp white sugar ( 9 tsp ).5 tsp Vanilla extract( other suitable choices are almond and peppermint extracts )
Preheat oven to 250 F.
Beat egg whites on high in an electric mixer until firm peaks are formed when the beaters are lifted.
While continuing to beat the eggs add in the sugar 1 tbsp at a time. Finish the mixture with the flavour extract of your choice.
Use a piping or plastic bag to pipe the mixture onto a cookie sheet lined with parchment paper, making "kiss" shapes. Can also be made into nests in cupcake tins, perfect for filling afterwards!
Bake for 45 minutes or until quite dry to the touch.
Let cool and enjoy!
