Kitchen Sink Veggie Soup

3 c. cubed sweet potato1 large onion1.5 c. sliced carrots7 c. chopped cabbage2 c. chopped leeks2 10-oz. cans Rotel tomatoes2 14.5-oz. cans chicken broth2 T. oregano
Directions
Layer ingredients in the order listed in large crock pot. Sprinkle salt & pepper on top. Cook for 8 hours on low.
