Stuffed Green Bell Peppers

Ingredients
6 green bell peppers, top and inners removed1 lb ground chuck, browned and drained1 can Rotell, hot1 can tomato paste2 cups brown rice, prepared according to package instructions
Directions
Preheat oven to 350 degrees Fahrenheit. Spray a baking dish with non-stick cooking spray. Place peppers, cut side up, in the dish.


In a large bowl, combine the ground chuck, Rotell, tomato paste and rice. Mix well.


Spoon mixture into peppers. Cover the dish with aluminum foil and bake for 60 minutes or until the peppers are pruney and tender. Serve hot.

    My husband loves stuffed bell peppers,except I boil my peppers first,drain them then stuffed them and bake. Love the rotel in them gives more flavor to them. - 9/8/09
