Crockpot Brisket with Beer

2 ½ to 3 pounds lean beef brisket, well trimmed1-tablespoon EVOO1 onion, sliced into rings and separatedCombine:1 tablespoon Dijon mustard½ teaspoon dried thyme¼ teaspoon dried rosemary, crumbled½ teaspoon sea salt3 cloves garlic, minced1 bay leaf 12 ounces beer or 1 ½ cups red wine (I used 11.2 fl. oz. Guinness Black Lager beer, cold brewed with roasted barley)
1. Heat the EVOO in a large skillet. Over medium-high heat, brown brisket on all sides.
2. Place the onion rings on the bottom of the crockpot and then the browned brisket on the onions.
3. Pour the combined ingredients then the beer or wine over top of brisket.
4. Cover and cook on HIGH 5 to 6 hours or on LOW for 9 to 11 hours.
5. Remove from crockpot and let rest for 10 minutes before slicing.
Serving Size: Makes about 8 (4½ ounce) servings
