3 cans San Marzano tomotoes (28 oz each)1 c chopped onions7 cloves of garlic -- chopped2 c veggie broth2 tbs olive oil1 c light coconut milkspinach about 1/2 c. (optional)seasoning: basil, sea salt, black pepper, garam masala (add seasoning to taste)
saute onions and garlic in olive oil until onions are translucent. add other ingredients. bring to a boil. add seasoning. lower temp and stir -- cook about 2 minutes.
remove from burner. Use immersion blender or regular blender to blend -- blend as desired.
