Quinoa Salad with Cucumbers, Dried Cherries and Parsley

Ingredients
1 cup dry quinoa, prepared with water1 cup diced English cucumber (peeled and seeded)1/4 cup Trader Joe's unsweetened and unsulfured dried cherries, 1/4 cup chopped fresh parsley2 Tbsp. EVOO 2 Tbsp. organic white wine vinegar1/4 tsp. seas salt 1 tsp black pepper
Directions
Prepare quinoa according to package directions; spread on paper-towel-lined baking sheet to cool and dry. Add to large bowl.

Chop cucumbers and parsley, and halve dried cherries. Add mixture to cooked quinoa.

Whisk to combine EVOO, vinegar, salt and pepper in small bowl. Pour over salad mixture and stir well to combine.

Serving Size: Makes 6 side-dish servings.
