Almond Baklava Shortbread Cookies

Ingredients

1/2 cup liquid honey1 cup slivered almonds1/4 tsp almond extract1 cup butter2.5 cups corn starch1/4 cup powdered/icing sugar1/2 tsp cardamom1/2 tsp salt (if using salted butter, omit this)
mix together honey, almonds, and almond extract. Pour into a baking sheet and bake at 450 degrees for 20 minutes. This will make a toasted almond brittle. Allow to cool and harden. Puree in a food processor until it is chopped finely.
Combine the all ingredients, including the puree above with an electric hand mixer. It should come together. Form into a ball and refridgerate, covered, for 30 min. Form into little balls (about 1 inch) and flatten with back of glass dipped in regular sugar. Bake at 350 F for 15 minutes or until bottom just browned.
