Not Beef and Broccoli with Udon Noodles

Ingredients
2 Tbsp spectrum coconut canola oil blend2 Tbsp low sodium soy sauce1/2 Tbsp rice wine vinegar1/2 Tbsp agave nectar1/4 cup water 1 Tbsp corn starch1 package sweet earth seitan slices, strips, or ground2 cloves of garlic, crushed3 cups broccoli , chopped into florets1 jalepeno pepper, seeded and thinnly sliced1.5 cups shiitake mushmooms sliced into strips1 tsp fresh ginger root, grated1/4 tsp black pepper1 package KA ME Udon stir fry noodles
Directions
Heat oil in a wok or large skillet. Saute the garlic for about 2 minutes. Add jalepenos and ginger and cook 1 more minute. Add the mushrooms and cook 3~5 minutes until softening. Meanwhile, mix the water, soy sauce, agave, vinegar, black pepper and corn starch. Add the broccoli and seitan to the veggie mixture and stir fry about 5 minutes until broccoli begins to soften and the seiten browns. Add the udon noodles and cook 1 minute. Stir in the sauce and heat until bubbling and thick ~1 minute.
