Onion, 1 large yellow, dicedGarlic, crushed to taste (2-4 cloves)Mushrooms, sliced approx. 4 cupsSpinach, chopped, 1 bunch freshCheese, Swiss, grated 6 oz.Eggs, whisked, 6 largeSalt and Pepper to taste1-2 shakes of nutmeg
In a large skillet, pan fry onions and garlic in a tsp of coconut oil until soft. Add mushrooms and continue cooking until they are lightly browned and soft too. Add chopped spinach stirring until wilted. Turn the heat off under this pan and let cool. Spray the inside of a rectangular baking dish and turn on your oven or toaster oven to preheat to 350 degrees F. Add cheese to the vegetable mixture and stir in. Season mixture to taste. Whisk the eggs and add to the vegetable mixture, pour into your prepared baking disk, and bake for 30-35 minutes until set. Once cooled, slice into 6 servings.
